Tortilla de Patatas Recipe

This week, I made ‘Tortilla de Patatas’, in Spanish class. Tortilla de Patatas is a typical Spanish dish made up of eggs and potatoes. It is cooked in a skillet and is often served as a snack. Also, it can be served warm, cold, or even at room temperature!


Since I really enjoyed the process of making it and it tasted really good, I decided to share the recipe!


INGREDIENTS:

  1. Olive oil

  2. 4 Medium Size Potatoes

  3. 1 White Onion

  4. 4 Eggs

  5. Sea Salt

  6. Hot Sauce (This is solely for flavor and is optional)


PROCEDURE:


Potatoes:

  1. Peel the potatoes and use a knife to cut them into 1/4 inch circular slices.

  2. Add about ¼ cup of olive oil to a 10 or 12-inch skillet over medium heat.

    1. (It’s best to use a skillet that is at least 1 1/2 inches deep.)

  3. Add the sliced potato to the pan.

    1. Make sure the potato slices are covering the entire bottom of the pan.

  4. Season with 1 1/2 teaspoon sea salt.

  5. Cook on low heat, maintaining a gentle boil, for 8-12 minutes.

Eggs and Onions:

  1. While the potatoes are cooking, dice the onions into fine pieces.

  2. Add ¼ cup of olive oil to a smaller skillet over medium-high heat and place the onions in there.

  3. Cook the onion, while turning occasionally, for about 5 minutes (or until they are see-through).

  4. While the onion is cooking, crack the eggs and beat them in a separate bowl.

  5. Once the onions are done cooking, add them to the bowl with the beaten eggs.

Tortilla:

  1. At this point, the potatoes should be done. Add the egg/ onion mixture to the pan containing the potatoes.

  2. Turn up the heat to medium-high, and let this cook for about 10-15 minutes.

    1. Make sure to run a spatula along the outer edges of the tortilla to make sure it’s not sticking and to help it form its shape.

  3. Once it starts to firm up around the edges and in the center (although it will still be a little runny on top) place a large plate (larger than the size of the pan) over the pan and flip the tortilla onto the plate.

    1. At this point, the cooked side of the tortilla is facing up.

    2. Now gently slide the tortilla back into the pan. Make sure the uncooked side of the tortilla slides onto the pan.

    3. Now use the spatula to press the sides of the tortilla in and under, to keep that rounded edge.

  4. Cook on high heat for 1 minute, and low heat for 2-3 more minutes or until done. It’s done when it feels set in the center and a knife or toothpick inserted into the center comes out clean.

  5. Once the dish is finished, you can add some hot sauce if you like :)
